Lipscomb closes majority of dining options due to staffing issues

Lipscomb announced Tuesday morning that campus dining is experiencing “industry-wide” staffing issues due to COVID and the national labor shortage. “Many industries across the country are experiencing staffing shortages due to labor availability and health concerns. Unfortunately, from time to time these challenges also affect the Lipscomb community,”said the university in an email to students. “This week, Sodexo, our partner that operates and staffs Lipscomb Dining operations, is experiencing a staffing shortage across their Nashville operations which has an impact on the number of employees who are available to staff the various dining locations on our campus.” Toss, Blue Coast Burrito, Au Bon Pain, Chick-fil-A and Creekstone will be closed for the foreseeable future. Lipscomb introduces new protocols to on-campus food service

It’s no secret that college campuses will look different this semester. With safety at top priority, Lipscomb has created some new ways for students to eat on campus.  There have been new dining options, a full-service Chick-fil-A and even a healthy snack bar added to Bennett in preparation for students’ arrival in the fall. “We will be doing some fairly dramatic changing in terms of food service,” said President Randy Lowry in a conversation with Lumination about dining at Lipscomb this fall. Lowry talked about four specific changes that students will notice come August. The first “dramatic change” Lowry noted was the limiting of seating in Bison Cafe to half of its usual capacity, in order to follow social distancing guidelines. To accommodate for this loss of seating, there will now be seating available in two additional spaces: Room 1891 and downstairs in Shamblin.  Not only will there be a reduction in seating, but the serving of the food itself will no longer look the same either.  That’s where the next two major changes come into play. “There will be no self-service in the cafeteria,” Lowry said. “Everything will be served to you.” The Bison Cafe won’t be changing what food is served, just how the food is served. These modifications will limit contact between those in the cafeteria to reduce the spread of germs.  “We will have a very robust grab-and-go kind of concept that will be introduced,” Lowry said.  There will be an area where students can pick up pre-portioned food in addition to a cafeteria-style station. Lipscomb Dining chips in a few new changes to on-campus locations

Lipscomb Dining may not be promoting any new restaurants or redesigns for the fall semester, but a few developments here and there have solidified the idea that campus’ dining department is always open to change.  Dining General Manager Wolcott Fary says that not much is different at the Bennett Campus Center food court this semester, but he did have a few updates to share. For example, popular dining spot Far East Fusion has undergone a few adjustments. “It used to be that they would pack everything into a bowl, stick it in the window and that would be it,” Fary said. Fary said that he supplied Far East Fusion with new steam equipment to freshen the food. He also explained that the restaurant will now serve fresh food, and the students can order what they want. Because of this change, business for Far East Fusion has doubled, according to Fary. While Blue Coast Burrito and Papa John’s have only utilized occasional specials, Chick-fil-A has added new salads. But, one item that won’t be arriving at Chick-fil-A anytime soon are the legendary milkshakes. Fary said that because the Chick-fil-A at Lipscomb  is technically an express store, the corporate office decides what should be served at express stores. Therefore, unless the corporate office includes milkshakes in the express restaurants’ menus, the well-loved dessert won’t be coming to campus. Fary said that Zebi is doing fine, but Auntie Anne’s has slowed down measurably from last year’s hype. Students like Lipscomb food, but offer suggestions for next year

  As the school year comes to a close, Lipscomb students hope that their return in the fall will also bring about better food options. “Eating healthy makes me more focused and less jittery,” explains Claire Hooper, a junior psychology major from Franklin, Tenn., who tries to pick healthy choices on campus, such as salads, fresh fruit, and grilled chicken. However, she finds her selection limited, expressing that although believes the food has improved, particularly in the cafeteria, she also believes it to be primarily processed. Freshman Travis Guerra, a political science major from Chicago, says that for a college campus, the food Lipscomb provides is decent enough. A self-professed health-conscious individual, Guerra tries to avoid most of the fast food options in the Student Center, but occasionally has Blue Coast, saying that it is often fresher than what the cafeteria has to offer. For meals upstairs, he usually has grilled chicken and the occasional salad, but is frustrated that the lettuce is dry and tasteless. Guerra believes that better quality food gives him more energy and makes him a more productive student. Students who focus on health for their major offer good suggestions. Jennifer Cislo, freshman, nutrition major from Chicago says she believes that campus food is not stored properly, which she says makes oranges, bananas, and apples bruised and the lettuce brown or shriveled. “They’re bland,” she explains. “They’ve lost their flavor.
